I use this refreshing minty sauce to serve alongside Indian curries, as a dip with crisps or with seared chicken strips in wraps...very versatile and delicious. If serving with curry I add a teaspoon of garam masala powder

Bowl
Grater
sharp knife and chopping board
Ingredients
500g Greek yogurt
Handful of mint
Handful of coriander
4 Spring onions (whole thing except tips and root)
Half a cucumber
1 green chilli
2 cloves garlic
Salt and pepper to season
Method
Chop the mint and coriander and place in bowl
Slice the spring onions finely and add to mixture.
Grate the cucumber and using your hands (make sure they are clean!) squeeze out the excess water into the sink. Once most of the water is removed place cucumber in bowl.
Finely chop the chilli and garlic and place in bowl. Give a thorough stir and season to taste
