Oliver's Ramem is quick, healthy, absolutely delicious....

Serves 4
Preheat oven to 200c or 180 fan
Ingredients
Marinade
4 tsp fresh ginger peeled and finely grated
1/2 lime
4 tbsp soy sauce
4 chicken breasts (pref skin on)

Main dish
2 litre chicken stock
3/4 cup (12 tbsp) Frank's hot sauce /siracha
Ramen noodles for 4
Handful beansprouts
1/2 red onion finely sliced
4 spring onions
2 fresh red chilli finely sliced
1 lime cut into wedges
Handful coriander
sesame seeds or crushed peanuts
Optional extras (you can add any veg you have)
egg per person
grated carrot to serve
green beans cooked ahead then plunged in ramen to heat through before serving...
Method
Marinade the chicken breasts for min 1 hour or overnight in fridge
Place chicken on baking tray in hot oven for 20 mins and roast. Check cooked through. Allow to rest for 5 mins somewhere warm covered with foil.
(If serving with a boiled egg place 4 - or 2 if half each- in pan of boiling water and boil for 7 mins. Allow to cool by pouring away boiling water and running cold water into the pan before allowing to sit in cold water, peel and slice in have length ways.)
While the chicken is cooking make the ramen by mixing the stock and the chilli sauce and use to cook the noodles in a large pan for 3-4 mins or according to pack.
Slice the onion thinly into half moons, finely slice the chilli, spring onions and finely chop the coriander
When ready simply divide broth and noodles between bowls top with coriander and red onions, place chicken on top and sprinkle chilli, spring onions and sesame seeds (and egg if choose). Serve with a wedge of lime.
