Throw it all into one tray and pop in the oven - what could be easier? It was so delicious we ate it before we could take a picture so will update another time!
Serves 4
Preheat oven to 180c or 160c fan
- 4 chicken legs or 8 thighs skin still on
- sea salt
- freshly ground black pepper
- 1 big bunch fresh basil , leaves picked, stalks finely chopped (or oregano - if you don't have fresh herbs sprinkle over a tbsp of dried oregano)
- 200g cherry tomatoes
- 200g baby plum tomatoes
- 1 whole bulb garlic , broken into cloves but keep skin on
- 400g tin cannellini beans drained (or butter beans or mixed beans)
- 1 fresh red chilli , finely chopped
- 750g new potatoes
- olive oil
Method
Take a large roasting dish and chuck all the ingredients in, leaviing the chicken tighs or legs until the top. Sprinkle olive oil over the top and season.
Pop into the oven for 1 1/2hours until chicken crispy!
As serving squeeze the garlic cloves to release the garlic -you can eat the lot!
