All in one pan - flaky cod in a punchy tomato sauce. Serve with a baked potato or mash. Yum!
Ingredients
1 tbsp olive oil
1 large onion finely chopped
200g chorizo cubed
400g tin tomatoes
4 cod fillets
400g tin butter beans, drained
Handful of parsley chopped finely

Method
Heat the oil in a frying pan or flat casserole and add the onion. Cook over a medium heat for 5 mins until starting to soften. Add the chorizo and cook for another few mins to release the oil.
Tip in the tomatoes and then fill the can with water and pour in. Stir well.
check the cod is no longer translucent and serve.
