Ingredients
450g or 1lb fresh cranberries
1 heaped tsp freshly grated ginger
4cm piece cinnamon stick
2-3 tbsp port
juice and rind 1 large orange
75 g / 3oz caster sugar
4 cloves
Method
Place cranberries in a pan with the finely grated orange rind, ginger, sugar and spices. Bring up to simmer stirring well. Leave to simmer gently for 5 mins.
Cool, remove the cloves and serve or freeze or chill for up to a week.
