Green Bean Salad

 Goes nicely with warm potato salad as accompaniement to meat

serves 6-8

Ingredients

200g green beans (topped and tailed)
1/2 red onion
2 ripe large vine tomatoes
1/2 cucumber
handful parsely
1/4 cup olive oil
1/4 cup lemon juice
3 cloves garlic
pinch of chilli flakes
small handful fresh mint 

Method

Boil green beans until al dente (6 mins). Refresh by draining and dousing in ice cold water until cooled. Place cooked beans on kitchen roll to soak up excess water then place in a bowl.

Finely chop the red onion, cucumber, tomatoes, mint and parsely (save a little sprikle of herbs to top) and add to the bowl. In a separate bowl mix lemon juice, olive oil, crushed garlic cloves, a pinch of chilli flakes. Pour lemon and oil mix onto beans mixture, season and gently stir. Turn onto a serving dish. Top with remaining herbs to serve.
