Freddy's Lemon Drizzle Loaf



Made for my birthday by Freddy- and gone the next day - absolutely delicious!




Preheat the oven to 180c or 160c gas mark 4
Prep time: 20 min
Cooking time: 45 mins

Ingredients

225g unsalted butter, softened
225g caster sugar
4 eggs
225g self-raising flour
1 lemon zested

Drizzle topping
1 1/2 lemons juiced
85g caster sugar

Method

Beat the butter and caster sugar together until pale then add eggs slowly.

Sift the self raising flour and add with lemon zest. Mix to combine.

Line a loaf tin (8x21cm) with greaseproof paper.

Spoon the mixture into the tin and level the top gently

Bake for 45 mins until skewer comes out clean

While the cake is cooling in its tin. mix together the drizzle ingredients.

Prick the warm cake all over with a fork and pour the drizzle over the cake.

Leave until cool then remove and serve.
