Yum! Last day of holidays treat!
Serves 4
Ingredients
8 oz (220g) flour
2 eggs
1 pint (600ml) pint milk
Veg or sunflower oil for cooking
Method
Sieve flour into bowl and make a little well in the centre with your finger.
In a jug measure out the milk and crack the eggs into it.
Pour about 1/4 milk mixture onto the flour and whisk well immediately and continuously to get rid of lumps
Slowly pour on the rest of the milk whisking continually.
Put a large frying pan on the stove and pour in just enough oil to cover the whole of the base when warmed.
Heat until really hot then turn down to mid heat.
Pour the batter back into the jug and pour a little into the pan - swirl around so it covers the base

When one side loosens from the pan on shaking, toss or turn using a spatula.
Cook other side until tinged and serve or stack 'em high!
