Roast Salmon with peas, potatoes and chorizo (WW)

Tasty, quick mid week meal -  Add a sprinkle of chilli flakes before roasting for an extra kick! Once potatoes par-cooked everything goes into one roasting dish in the oven.



Preheat the oven to 200c or 180c fan
Serves 4
Ingredients
600g new potatoes
150g chorzio 
3 red onions
1 tsp dried mixed herbs
2tsp paprika
1 tbsp extra virgin olive oil
150g frozen peas 
4 salmon fillets 
4 sprays of calorie controlled oil spray

Method

First, put the new potatoes in boiling water and simmer for 20 mins. Drain
Chop the chorizo into slices.

Peel and cut onions in half before cutting into wedges


Place the chorizo, onion, mixed herbs paprika and the potatoes into a bowl. Stir then drizzle with the oil and stir again gently.

Place into  a roasting tray and put in oven for 35 mins, stir round once half way mins.
Scatter over the peas and top with salmon fillets
mist with the cooking spray and return to oven for 10-12 mins.

Grind over some fresh pepper and plate up
