Seared cod loin with potato salad (WW)

 Fresh tasty and low fat - perfect! Freddy particularly likes the potato salad!





Serves 4


Ingredients

800g new potatoes halved

2tbsp Red wine vinegar 

4tbsp Olive Oil

1 red onion finely chopped

2 tbsp capers in brine

Calorie controlled spray (5 sprays)

4 cod loins

Salt and pepper

Method

Boil the potatoes until tender (10-15 mins)

Whilst potatoes are cooking put the vinegar into a large bowl with olive oil, onion and drained capers. 

Add the drained potatoes and stir gently to coat everything in the dressing.

Spray oil into frying pan and when is hot place the seasoned fish in and fry on each side for 3 mins. Allow the fish to rest for a minute.

Serve the potato salad and fish with green veg or salad.
