Speedy Salmon with Spinach, Sundried Tomatoes, Olives, Capers and New Potatoes

 

Healthy and quick mediterranean dish 



Serves 4
Prep time: 10 mins
Cook time 20 mins


Ingredients
4 salmon fillets
1 tbsp olive oil 
3 cloves garlic finely diced
1/4 cup sundried tomatoes chopped
1/2 cup kalamata olives 
1/4 cup capers, drained
400g spinach rinsed
400g new potatoes
200g Feta cheese 
salt and pepper to season


Method

Put the new potatoes in a pan, cover with boiling water and simmer for 20 mins. Drain and keep warm.

Heat 1 tbsp olive oil in a skillet. When the oil is searing hot turn heat to med high, add the salmon fillets flesh side down (skin up and sear for 3 mins).




Turn the fillet  and sear for 4 mins on other side.

Remove the salmon from the skillet and keep warm.



Add the sundried tomatoes, garlic, artichokes, capers to the pan and cook for a minute. Add the fresh spinach and stir until wilted. season. Roughly break up the feta and sprinkle into the dish.  Gently mix the  potatoes place the salmon on top and warm through.

Place the veg on a plate with potatoes and top with salmon.
