Spinach soup

 Packed full of goodness and tastes delicious too!



Ingredients

25g butter
1 bunch spring onions chopped
1 leek sliced
2 sticks celery sliced
1 med potato peeled and diced
pepper and salt
1 litre stock made with veg or chicken stock cubes according to packet
400g spinach
creme fraiche to dollop if desired
Cayenne pepper to sprinkle


Method

  • Heat the butter in a large saucepan. Add the spring onions, leek, celery and potato. Stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.


Pour in stock and cook for 10-15 mins until potatoes soft



Add the spinach stir a little and put the lid back on to  cook for a couple of minutes until wilted. Don't worry it will break down quickly.




Use a hand blender to blitz to a smooth soup.

Season to taste.
