Super Speedy Satay Stir fry -

 Fling it all together and within minutes you have a great satay stir fry. Add any protein!
,A great way of using up any veg lurking in the fridge...serve with noodles or rice.


Ingredients
3 tbsp crunchy peanut butter
3tbsp sweet chilli sauce
3 tbsp soy sauce
Noodles - whichever you like cooked according to pack instructions
1tbsp olive oil
large thumb sized piece of fresh root ginger peeled and grated
1 red chilli chopped finely 
1 tsp dried chilli flakes (or more to taste)
About 300g of any veg sliced  up or a pack of stir fry veg  (courgette,carrot, pepper, onion, broccoli, spring onions...
Basil leaves or thai basil leaves if you like!
Handful of chopped coriander
25g roast peanuts roughly chopped
4 chicken breasts  or pork, beef, tofu... the choice is yours! I am using chicken here
Salt and pepper

Method 
The quickest satay ever! Mix peanut butter, sweet chilli sauce and soy together.
Add 100 ml water (dont worry this will thicken during cooking). Done! Set aside.
Slice up the chicken (or whichever meat) into strips then season with a little salt and pepper
Cook the noodles according to packet instructions.

Heat the oil in a frying pan or wok until smoking hot. Sear the chicken quickly turning only a few times for about 3 mins. Remove to a plate and keep warm (it will keep cooking while sitting there so don't over do it).
In the same pan stir fry the veg for a couple of mins. When beginning to soften add the ginger and and chilli and stir through.
Get the plates ready.  Pour the satay into the pan stirring it into the veg. If you have basil rip it up and add it now.
Put the chicken back into the pan and stir through.Add the coriander and stir.Check seasoning and heat. Add more chilli flakes if needed.
Serve immediately sprinkled with peanuts.
