Preheat oven to 190c or 170c fan
Ingredients
12oz (350g) plain chocolate broken into pieces
8oz (225g) butter
2 tbsp instant coffee dissolved in 2tbsp hot water (or 2 tbsp expresso from machine)
3 large eggs
8oz (225g) caster sugar
1tsp vanilla essence
3 oz (75g) self-raising flour
(6oz (175g) walnuts - Leave if coming into contact with nut allergy sufferers
8 0z (225g) plain chocolate chips
Method
Melt the butter and chocolate in a bowl in the microwave on 600 heat for 2 mins then stir then at minute intervals stirring in between until melted. The melted butter will help melt the chocolate.
Take another bowl and mix the coffee, eggs, sugar and vanilla essence.
Gradually beat in the chocolate mixture.
Fold in the flour and chocolate chips then pour into the prepared tin.Bake for 40-45 mins or until firm to the touch . A dull crust will form on the top.Leave to cool in the tin before cutting.
When cold cut into squares.
