Tomato and Chicken Mozzarella Bake (WW)

Chicken in a rich tomato sauce with mouthwatering melted mozzarella. If not using weight watchers add more cheese!



Ingredients
4 sprays calorie controlled spray
4 chicken breasts
2 cloves garlic
1 tin tomatoes
1 tbsp tomato puree
1 tsp dried mixed herbs
1/4 tsp chilli flakes
160g tagliatelle
light mozzarella cut into 4 slices
4 basil leaves 


Method

Mist a large nonstick ovenproof frying pan with cooking spray.

Season chicken all over and cook for 10 mins turning once -or until cooked through.

Transfer chicken to a plate.

Put garlic in pan and gently cook for a minute

Add tomatoes, puree, mixed herbs, chilli flakes and 75ml cold water. Season well and bring up to a simmer for 10 mins until it has thickened.

Meanwhile cook past according to packet instructions, drain and set aside

Heat the grill to high. Return chicken to the pan and spoon over the sauce. Top each fillet with a mozarella slice and transfer to the grill for 2 mins or until the cheese has melted.

Divide tagliatelle between plates, top with chicken and tomato sauce and serve with basil leaf
