One Pot Chicken Thighs with Basil, Chorizo & Cherry Tomatoes

 Baked chicken with cherry tomatoes and chorizo (one pan, only six ingredients)

Super quick to prepare then let the oven do the work!

Serves 4
Preheat oven to: 180c or 160 fan
Prep time: 5 mins
Cook time: 50 mins

Ingredients
8 Chicken thighs (skin on bone in or out)
1 bulb garlic split into cloves unpeeled
1llb new potaotes chopped to small chunks (or ditch and serve with mash)
8 oz chorizo diced
1 handful of basil leaves chopped or torn
1 pound tomatoes (cherry for flavour but any are fine)
1 tbsp olive oil
1 tbsp balsamic vinegar

Instructions
Place chicken thighs in large baking or roasting dish, scatter chopped potatoes around, add garlic and grind with salt and pepper


Scatter chorizo pieces over chicken followed by basil and tomatoes
Drizzle with olive oil and balsamic and bake for 50 mins until tomatoes are slightly charred and chicken cooked through and browned. 


Serve with green salad
