Simple and straightforward -serve these still on the vine - delicious!
2 pints cherry tomatoes
A few sprigs of thyme or rosemary
2 tbsp olive oil
salt and pepper
Method
Preheat oven to 220 or 200c fan .
Toss cherry tomatoes with thyme and oil on a rimmed baking sheet.
Season with salt and pepper.
Roast, tossing once, until tomatoes are blistered and beginning to burst, 15-20 mins
Cool slightly and serve
