Chocolate Fondants

Quick and delicious - but heavy on the calories!!

   Chocolate fondants
 
Oven temperature: Preheat oven to 220c or 200c fan
Cooking time: 8-10 mins

Makes 6 in a muffin tin (or 4 in individual fondant tins)

Ingredients
3 tsp cocoa powder to dust muffin tin moulds
130g butter (and a little extra for greasing)
170g chocolate - half dark half milk
2 eggs + 2 egg yolks
1/2 tsp vanilla essence
60g brown sugar
30g plain flour
Pinch salt

Method
Grease the muffin tray moulds with a little butter (using part of the wrapper) and dust with cocoa powder through a fine sieve to stop them sticking - over the sink as gets messy!

Melt the butter and chocolate in a bowl gently on a low microwave heat stirring half way through.

In another bowl beat the eggs and yolks then mix in the sugar flour and salt. 

Add the vanilla essence to melted butter and chocolate then pour into the egg flour and sugar and stir well.

Spoon the mix into the muffin moulds being careful not to spill any.

Bake in the oven for 8-10 mins (check after 8. The outside should be cooked but the centre still runny.

Take out of the oven and leave for a min or two before gently using a flat knife to ease round the edge and take out each fondant very carefully so as not to break open.

Serve with ice cream, cream and berries
