Almond biscuits (gluten free)

 

Delicious gluten free mini biscuits using ground almonds in place of flour

Preheat oven to 160c fan

  • Ingredients
  • 4 large free-range egg whites
  • 350 g caster sugar
  • 350 g ground almonds
  • 30 ml amaretto liqueur
  • icing sugar to serve

Method

Line two large baking sheets

Whisk egg whites in a bowl until form peaks. 

Fold in sugar, almonds and amaretto to form a thick paste

Using a teaspoon to measure each biscuit, roll each one between balms to form a ball. Place 2cm apart on the baking trays and genty press down slightly.

Bake in the oven for 20 mins until lightly tinged  golden brown

Dust with icing sugar to serve
