Make this with or without walnuts (or pecans) incase of allergies. If you don't have a 2 lb loaf tin you can make muffins in paper cases liking a muffic tin. Can freeze. Defrost at room temp and if liked can warm through before serving
Preheat oven to 170 or 150c
Ingredients
100g butter softened
140g caster sugar
1 egg beaten
225g plain flour
2tsp baking powder
4 very ripe bananas (or 5 if small)
85g walnuts (optional)
50ml milk
Method
Line a 2lb tin or a 12 muffin tray with paper cases.
Beat butter egg and sugar together in a large bowl.
Add sieved flour and baking powder and beat in.
Peel and mash bananas and add with nuts.
Finally stir through the milk but do not over beat at this stage, just stir through.
Transfer to the lined loaf tin or spoon into the cases.
If using top with a few walnuts along the centre of the loaf or on the centre of each muffin.
Bake in the centre of the oven for an hour for the loaf tin or 30 mins for the muffin tins until browning on top.
Remove from oven and let cool in tin.
Serve with loaf with butter if you like - but is moist enough to devour without!
