One of my favourites with beef or chicken!
Ingredients
5 garlic cloves
1/2 chopped red onion
1/2 chopped red onion
1 red chilli finely chopped
2 cups (handfuls) of flat leaf parsley
1 cup coriander
1/4 cup oregano leaves or 1 tsp dried oregano
Juice 1 lime
2 cups (handfuls) of flat leaf parsley

3 tbsp red wine vinegar
1 1/2 cup extra virgin olive oil
A heaped tsp rock salt
Red pepper flakes to taste (or pepper)

Method
Either chop dry ingredients finely then mix in a bowl with wet ingredients or use a food processor to pulse garlic and onion until finely chopped before adding the parsley, coriander and oregano and pulsing. Put herbs in a bowl and add wet ingredients. Stir well and season to taste. Can be made a day or two in advance if kept in fridge.
