MAKES BREAKFAST A BIT MORE SPECIAL!
4 cups oats
1 1/2 cup nuts or seeds chopped if large (pecan, hazelnut, pumpkin brazil)
1 tsp fine grain sea salt
1 tsp ground cinnamon
1/2 cup melted olive oil
1/2 cup maple syrup
1 tsp vanilla extract
2 cups dried fruit, chopped if large (cranberry, sultanas)
METHOD
Preheat oven to 180 or 160 fan and line a large baking tray.
In a mixing bowl combine oats, nuts, seeds, salt and cinnamon. Stir together until well blended.
In a separate bowl add oil, maple syrup / honey and vanilla and whisk before pouring over the dry ingredients. Mix until well coated.
Scrape mixture onto baking dray and even out.
Bake for 25 mins turning over half way with a fish slice - don't worry about being neat.
Leave on baking tray to cool before mixing in the dried fruit and transferring to a large storage jar or tuppaware
