Healthy Thai Style Salad (to accompany pulled pork or shredded chicken)

Deliciously fragrant thai salad - serve with chicken, beef or pulled pork


Serves 2 

Ingredients
1 chilli, thinly sliced, deseeded, optional 
1 garlic clove, sliced 
100ml Chinese rice wine vinegar 
2 tbsp golden caster sugar (or white)
1 tbsp fish sauce 
¼ cucumber, 
shredded 1 carrot, thinly shredded 
50g mangetout, shredded 
2 salad onions, thinly sliced 
2 Chicken Skinless Breast Fillets or pulled pork with crackling (in picture)
28g fresh coriander, leaves picked 
2 tbsp roasted peanuts, finely chopped 

Method
Place the chilli, garlic, vinegar and sugar in a saucepan and heat to dissolve the sugar. Remove from the heat and stir in the fish sauce. 

Toss the dressing into the vegetables. Top with the meat and sprinkle with add the coriander. Serve the salad in a bowl and top with the peanuts.
