Pan Seared Salmon with Spinach and Sundried tomatoes

 Really delicious and super quick!

(serves 4)

INGREDIENTS

4 Salmon fillets
1 tbsp olive oil
1/4 tsp salt
3 cloves garlic minced
1/4 cup sundried tomatoes
1 cup artichoke hearts chopped
2 tbsp capers (drained)
Spinach large bag (washed)
salt to taste
Boiled new potatoes to serve

METHOD
Heat 1 tablespoon of olive oil in a large skillet on medium-high heat. 
Season salmon fillets with a little salt.
When oil is hot, add salmon fillets flesh side down (skin side up). 
Sear for about 4 minutes on medium-high heat.
Reduce heat to medium then flip salmon over (skin side down). 
Sear for another 4 or 5 mins. 
Remove salmon and set to one side.
Put sundried tomatoes, garlic, artichokes and capers into skillet. Stir gently and warm through for a min.
Add fresh spinach and pop a lid on, removing to stir occasionally until wilted. Season if required. 
Put veg on a plate and top with salmon. Serve with new pots
