A really tasty spicy tomato rice dish - can add in any veg - don't have to have prawns but chorizo is a must for me.



Serves 4/5

Ingredients

1 tbsps olive oil
2 chicken breasts
Pack frozen prawns defrosted
75 g chorizo sliced
1 onion diced
2 cloves garlic
1 red or yellow pepper thinly sliced
Bag fresh spinach washed and sliced roughly
1 tbsp cajun spices
250g rice
400g tinned tomatoes
350ml chicken stock 

Method

Heat the olive oil and brown seasoned chicken breasts on a high heat until slightly crispy golden then remove to a plate. Quickly pan fry the prawns and place on same plate.

Gently saute the onion until soft before adding chorizo and sliced red pepper for 5 mins. Add crushed garlic and cajun seasoning and stir through to heat.

Add rice, tomatoes, chicken stock and cover. Simmer for 20-25 mins until rice cooked through. 

Add chicken, prawns and spinach back into pan, cover and warm through.

Serve and enjoy!
