Healthy, fast fish dish
Serves 4
Ingredients
1/2 cup sweet chilli sauce
2 tbsp soy sauce
2 cloves garlic minced
1 tbsp fish sauce
1 tbsp fresh ginger grated
juice 1 lime
1 tsp sriracha
4 salmon fillets
2 bsp chopped coriander
handful peanuts chopped if desired
More lime to serve if required

2 bsp chopped coriander

More lime to serve if required
Method
Preheat oven to 200c or 180c fan
Whisk chilli sauce, soy, garlic, fish sauce, ginger, lime juice, sriarcha in small bowl.
Place salmon onto a large sheet of foil on baking sheet and fold the up the sides. Pour over the chilli sauce and gently crimp the foil edges around the salmon to seal leaving some space inside.
Bake for 20 mins
Serve immediately sprinkled with peanuts and coriander, with extra segment of lime to garnish, alongide rice, noodles or potatoes and veg.
