Lemon Caper Veg


 Delicious way to perk up summer veg side plate!

  


Ingredients:

Green veg i broccoli stems, asparagus, green beans etc

2tsp drained capers

1/4 cup extra virgin olive oil

Juice and zest of a lemon 

Rock salt to taste 

 Method

Blanche the veg in boiling water for 4 mins. Removed, drain and cool quickly using cold water (and ice if have). Pat dry with paper towel and arrange in a serving dish. Mix remaining ingredients and pour over veg.
