Lovely wirh pasta or to top a salmon fillet mixed with breadcrumbs ….
Serves 4-6
- 75g pine nuts
- 75 g basil, leaves picked
- 2 tsp Maldon sea salt
- 1 clove garlic, crushed
- 100ml olive oil
- 50g parmesan or grana padano (or veggie alternative), finely grated
- (Optional is to add a couple of handfuls of green peas or some spinach to incorporate the veg)
Method
Put the nuts into a small food processor and pulse a few times until they start to break down. Add the basil, salt and garlic, and whizz while drizzling in the olive oil, until you have a bright green sauce. If adding peas or soo ach whizz in now. Finally stir in the cheese.
Simply stir through pasta and serve or mix with 3 slices bread (finely in inchopped or processed to make crumbs) to top individual salmon fillets baking for 10 mins (remove skin first) .
