Bobotie

A deliciously flavourful S African dish - one of Henry's favourites! This does take a little while to cook so give yourself plenty of time






Serves 4-6

Pre-heat oven to 180c or fan 160c

Prep time 20 mins

Cook time 45 mins (30 and 15)


Equipment

Chopping Board

Knife 

Potato peeler

Grater

Garlic crusher

Tbsp measurer

Large flat casserole or frying pan

Wooden spoon


Ingredients

Mince mix

2 small /medium or 1 very large onion

2 tbsp butter or ghee (Indian butter)

3 Cloves garlic

1 tbsp fresh ginger (use potato peeler to take skin off and grate with fine grater)

3 tbsp mango chutney

1 kg minced beef or lamb

1 tbsp red or white wine vinegar

1 tbsp Worcestershire sauce

1 beef stock cube

1 tbsp curry powder

2 slices bread soaked in milk in a shallow dish (should be white but don't worry if not - I used granary) 

1 tsp turmeric

salt and pepper to taste

4 bay leaves

3 tbsp sultanas

2 bay leaves


Topping

2 large eggs

300ml milk

Pinch or 1/2 tsp turmeric

4 or 5 bay leaves


Accompaniment

12 oz rice

salt


Method

Melt the butter in a frying pan or large shallow casserole. Chop the onions finely and add to the pan with the crushed garlic and grated ginger. Saute until starting to tinge golden brown at the edges.



Add the spices, chutney, mince,  vinegar, Worcestershire sauce, sultanas and crumble the stock cube over. Stir mixture well and fry over a gentle heat until the mince is browned.



Take the bread from the milk and stir well mixture so is fully blended, together then pop 2  bay leaves into the mince. 




Cover the dish and place into the preheated oven for 30 mins.

Blend the milk and eggs, seasoning with salt and pepper and a pinch or 1/8 tsp turmeric.  


Pat down the mince mixture so even and pour the milk and egg mix over, placing

 the bay leaves along the top. 




Don't worry the topping  will sink a little but will puff up during cooking 




Boil a kettle and pour boiling water to cover the rice by a cm or 2. Put on the hob to simmer with a lid half covering for 15-20 mins then drain and replace lid to keep warm.



Once the rice is on the hob, rplace Bobotie in the oven without a lid for 15 mins until golden.

Serve with rice.
