Quick fluffy Omelette

 Perfect lunch - quick and nutritious - Oliver is an expert already but here is how I do them....

Equipment

Bowl

Fork

Small Frying pan

Grater if using cheese

Knife

Chopping board


Ingredients

1 tsp Olive oil 

2 or 3 eggs depending on how hungry (I use 2, Oliver probably used 4!)

1tsp oregano

Grated cheese/cooked meat/chorizo/tuna/ tomato/philli ... whatever you like!

Splash of hot sauce

Salad (lettuce, cucumber, tomato, avocado, spring onions...

Balsamic to dress


Method

Crack eggs into bowl with a pinch of salt, grinding of pepper and 1 tsp Oregano.


whisk thoroughly.

Heat oil in the frying pan. Make sure the whole base of the frying pan is covered and the oil is good and hot.

With the heat medium high, pour the egg mixture into the pan and using a spatula pull the egg to the centre and out allowing the raw egg to fill the space and creating waves of cooked egg. Try to do this evenly and make sure enough raw egg to make a complete covering. This makes it light and fluffy.



Once it is set, sprinkle your grated cheese, meat, fillings on one side.



Add a bit of hot sauce across the top if you like!

Leave the egg to cook and begin to colour. Check by using a spatula to gently raise and look at the underside.

Once colouring nicely, slide the spatula under one half of the omelette and gently fold over the fillings to meet the other side.


Leave for a further minute to melt the cheese and any fillings.

Lift the pan to the plate and using the spatula, gently slide the omelette over.


Serve with salad dressing the leaves with a little balsamic.
