Comforting Carrot and Coriander soup

 


  1.     Ingredients
  2.     knob of butter
  3.     1 onion, finely chopped
  4.     650g carrots, peeled and roughly chopped
  5.     1 potato, peeled and chopped
  6.     1 tsp ground coriander
  7.     1 litre vegetable stock 
  8.     30g pack fresh coriander (save a little chopped leaf to serve
  9.     sprinkle of paprika to serve
  1. Method
  2. Melt the butter in a saucepan over a medium heat. Add the onion and allow to saute until translucent stirring occasionally. 
  3. Add the carrots, potato, and ground coriander and stir
  4. Pour in the stock, bring up to a simmer, half cover with a lid and cook for about half an hour.
  5. When the veg is cooked add the chopped coriander, blending with the hand blender.
  6. Serve with paprika and coriander sprinkled over the top
