- Ingredients
- knob of butter
- 1 onion, finely chopped
- 650g carrots, peeled and roughly chopped
- 1 potato, peeled and chopped
- 1 tsp ground coriander
- 1 litre vegetable stock
- 30g pack fresh coriander (save a little chopped leaf to serve
- sprinkle of paprika to serve
- Method
- Melt the butter in a saucepan over a medium heat. Add the onion and allow to saute until translucent stirring occasionally.
- Add the carrots, potato, and ground coriander and stir
- Pour in the stock, bring up to a simmer, half cover with a lid and cook for about half an hour.
- When the veg is cooked add the chopped coriander, blending with the hand blender.
- Serve with paprika and coriander sprinkled over the top
