Great breakfast with fruit or tea time treat
Ingredients
200g self raising flour

Method
Sieve the flour and baking powder into a medium sized bowl. Add the sugar and mix.

In a jug measure 200ml milk and break 3 eggs into it. Whisk.
Make a well in the centre of the flour and sugar and pour the egg mixture into the flour mixing with a balloon whisk to a smooth batter. Stir in the melted butter.

Carefully use a piece of kitchen roll to cover the surface of a non stick frying pan in a fine coating of oil.
Heat the pan until quite hot then turn to a medium heat.
Use a soup spoon (or dessert spoon) to spoon dollops of mix into the pan.

When bubbles appear on the surface of the pancake they are ready to turn. This is easily done with a pallet knife or fish slice.
Brown for a minute or so on the other side.
Put onto a plate in a warm oven until the whole batch is cooked then eat with fruit, Nutella, maple syrup.....
