Tastes like it has taken ages but the oven does the work for you - delicious! Serve with potatoes or rice and veg of choice
Preheat oven to 180c or 160c fan

1 tbsp salt and fresh pepper
2lb pork tenderloin
4 tbsps butter sliced into 4-6 pats
2 tbsp diced garlic
2 tbsp Italian mixed herb seasoning

Method
In a small bowl mix garlic and mixed herb seasoning.
Using a sharp knife or scissors, take off any sinew from the tenderloins as this is tough
Season the meat with salt and pepper generously on all sides then sear in a frying pan turning to colour.
Place on a baking tray lined with foil. Coat with herb and garlic mix. Place slices of butter on top.
Pull foil up on either side of meat and seal at the top leaving air gap but sealed.

Bake in the oven until meat is 150 degrees internally at thickest part (or approx 25 mins).
Open the foil parcel. Allow it to rest for 5 mins.
