Prawn and Chicken Nasi Goreng

 Packs a flavour punch.We ate this on our honeymoon in Bali - so good!

Serves 4


Ingredients 
1 White onion diced
4 cloves garlic
4cm ginger shredded or grated
4 spring onions sliced
1 med red chilli deseeded and finely diced
3 tinned anchovy fillets
1 carrot sliced thinly
2 tomatoes quartered
2 chicken breasts sliced finely
8 king prawns 

1 tbsp light soy
1 tbsp dark soy
1 tsp fish sauce
1 tbsp ketjap manis (a sweet soy sauce)
1 egg
2 cups cooked rice (cook ahead of time cool and refrigerate then reheat the next day but only once if not eaten, bin as can result in food poisoning)
White pepper  



To serve
4 fried eggs, diced spring onions, side salad

Method
Heat a wok with oil until smoking gently. Stir fry onion then chilli and finally garlic, ginger and carrot and keep moving so doesn't catch.


Add anchovies prawns and chicken moving around until cooked.

Add light soy, dark soy, fish sauce and ketjap manis, cook through for a minute. Create a hole in the middle and add the beaten egg stirring into itself then when cooked distribute around.

Add cooked rice and make sure is piping hot before seasoning to taste and adding spring onions.

Put in a little bowl, pat down then turn out onto a plate. Top with a fried egg and sprinkle with spring onions. Squirt over some siracha sauce and ketjap mani. Serve with a side salad and chinese crackers.
