Quick Chilli for delicious hearty supper!
Serves 4
Ingredients
200g chorizo chopped up into pieces
200g chorizo chopped up into pieces
500g mince (beef)
1tsp ground coriander
1 tsp ground cumin
1 tbsp smoked paprika (optional for earthy smokiness)
1/2 tsp ground cinnamon
4 cardamon pods bruised
2 x 400g tin of tomatoes or 600g passata for smooth consistency and more sauce!
60ml sweet chilli sauce
1/4 tsp chilli flakes
1/ tsp salt
tin red kidney beans in water (drained)
opptional extras:
Grated cheddar to top and some creme fraiche and avo with a slice of lime, chopped coriander....
Serve with rice
Method
Place Chorizo in a pan (no oil needed) and let the oil release as you lightly brown. Add the mince and squash up with spook as you brown it.
Add the spices and cook through to allow spices to release their flavour. Add tomatoes and chilli sauce and allow to bubble gently in a simmer for 20 mins on hob without a lid. (If it is a little dry use the tomato tin and add half tin water and put lid on to simmer)
Add the beans for a further 10 mins.
Serve with rice and optional extras.
