Lime and Garlic Chicken Thighs

Prep before and marinate for a quick fling together - delicious

Serves 4

  • 12, skinless chicken thighs
  • 3 tbsp olive oil 
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 cloves minced garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cumin 
  • 1 teaspoon paprika
  • 2 teaspoons salt 
  • 1/4 teaspoon black pepper 
  • Mix all ingredients except chicken and coriander into a small bowl and mix
  • Assad’s chicken thighs, mix and  cover and sit in fridge for as long as possible upto 12 hours
  • Heat a skillet over med high heat. Add the chicken and cook for 5-6 mins each side until cooked through thoroughly. Squeeze over some lime and sprinkle with fresh coriander
  • Serving suggestion: with rice mixed with tenderstem broccoli green beans, garlic (crushed) and sautéed onion.
