Prep before and marinate for a quick fling together - delicious
Serves 4
- 12, skinless chicken thighs
- 3 tbsp olive oil
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 2 cloves minced garlic
- 1 teaspoon red pepper flakes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- Mix all ingredients except chicken and coriander into a small bowl and mix
- Assad’s chicken thighs, mix and cover and sit in fridge for as long as possible upto 12 hours
- Heat a skillet over med high heat. Add the chicken and cook for 5-6 mins each side until cooked through thoroughly. Squeeze over some lime and sprinkle with fresh coriander
- Serving suggestion: with rice mixed with tenderstem broccoli green beans, garlic (crushed) and sautéed onion.
