A moreish treat for a weekend lunch - cheesy and delicious! After the cheese you can add anything you like! Serve alongside salsa, guacamole, sour cream and jalepenos
Serves 6-8
Ingredients:
12 flour tortillas (large)
Filling:
200g Grated cheddar/red Leicester
Bunch spring onions finely sliced
2 Shredded cooked chicken breasts / salami / chorizo etc
Sprinkling fresh coriander chopped finely
Finely sliced red chilli or a large pinch cayenne pepper
A red pepper sliced (Cooked from a jar or raw)
Method:
Mix all the filling ingredients in a bowl
Cooking one by one, lay a tortilla on a flat dry non stick frying pan and scatter filling over before topping with another tortilla. Turn heat to medium.
Leave to colour on the underside (keep lifting a little to check) for a minute and a half or so then really carefully lift using a fish slice and fry for another minute and a half. Pop onto a board or keep warm in the oven while making the rest. Cut into quarters and serve with guacamole, sour cream or creme fraiche and jalepenos yum!
